For simulated sports titles, is there a defined time format, such as a set number of periods and a maximum period length?

There is no hard cap as such. Each title has predefined period times, but whether overtime is possible depends on the sport: some include overtime and some don't. Period times for each title are listed in the General Betting Rules. The tournament organiser, drafted.gg, is also a reference source for match formats.
